Raetta’s Pepper Sauce

Raetta enjoys this pepper sauce in greens, peas, on cornbread, and in BBQ sauce. She makes it from her homegrown peppers – any type will work.

  1. Cut off the stem end of the peppers (so that the vinegar can flow inside) and place them in the bottle.
  2. Add white vinegar to the bottle to portion out how much is needed. Pour that vinegar from the bottle to a pot and heat just to a steam (do not boil: it’s not necessary and you don’t want to breathe concentrated acetic acid).
  3. Pour the hot vinegar back into the bottle over the peppers.
  4. Let sit for two weeks before using.
